In our quest for the finest, we seek lands and ingredients that are irrigated by natural streams. Soils must be untouched for at least 100 years, and the ecosystem must be virtually unaltered. The land must be 100% free of pesticides, surrounded by an approved buffer zone to protect against pesticide drift. The producers and growers must be artisans with a multigenerational heritage who are skilled in reviving old-world methods.
